Protein Balls

Need a new hiking companion? Look no further!


These guys are packed with healthy fats, whole grains, and protein (~6 grams/ball!), making for an awesome hiking or adventure snack!


The recipe makes 24 balls!

Ingredients:

  • 2 cup oats

  • 4 Tbsp each: ground flax, chia seeds, hemp hearts, plain protein powder

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1 cup peanut butter

  • 1/4 cup honey, melted

  • 1 Tbsp coconut oil, melted

  • 10 pitted Medjool dates

  • 2 eggs

1. Preheat oven to 350* and line a large baking sheet with parchment paper

2. In a blender or food processor add in the dry ingredients (oats, ground flax, chia seeds, hemp hearts, protein powder, baking soda, baking powder) and process until well-combined. Then add in the wet ingredients (peanut butter, honey, coconut oil, pitted dates, eggs) and process again until well-combined. May need to scrape down sides a few times to get everything combined.

3. Roll batter into 24 balls, place on a lined baking sheet, and bake for 13-15 minutes.

4. Can keep on the counter for 3-4 days, or in the freezer!
